Aztec Chilli Chocolate Chicken with Mango and Coconut

Ingredients

  • 400g Chicken Breast

  • 1 Chopped onion

  • 1 Chopped mango

  • 2 tablespoons olive oil

  • 1 teaspoon Cumin powder

  • 2 teaspoon Garam Massala

  • 1 Tablespoon Aztec Chilli Liquid Chocolat

  • 20cl Coconut Milk

  • 100g Plain Flour

  • 50g Butter

  • 100g Chopped Crostini

Method
  1. Place the 2 tablespoons of olive oil into the sauce pan. Place on High heat. When hot add the chopped onion and fry for 5 minutes until onion is turning golden.

  2. Add the Cumin, garam massala, and the Aztec Chilli Liquid Chocolat and cook for a further minute.

  3. Chop the Chicken into bite size pieces and add to the pan. Cook chicken for 10 minutes until cooked all through.

  4. Add the Chopped mango and Coconut Milk to the pan and cook for a further 1 minute.

  5. Now pour into the oven proof Dish.

  6. To make the crumble topping mix together the flour, butter, and crostini until consistency resembles bread crumbs.

  7. Add the crumble topping to the Chicken and place in a preheated oven at 210 until topping turns golden brown.
