Ingredients - 400g Chicken Breast
- 1 Chopped onion
- 1 Chopped mango
- 2 tablespoons olive oil
- 1 teaspoon Cumin powder
- 2 teaspoon Garam Massala
- 1 Tablespoon Aztec Chilli Liquid Chocolat
- 20cl Coconut Milk
- 100g Plain Flour
- 50g Butter
- 100g Chopped Crostini
Method- Place the 2 tablespoons of olive oil into the sauce pan. Place on High heat. When hot add the chopped onion and fry for 5 minutes until onion is turning golden.
- Add the Cumin, garam massala, and the Aztec Chilli Liquid Chocolat and cook for a further minute.
- Chop the Chicken into bite size pieces and add to the pan. Cook chicken for 10 minutes until cooked all through.
- Add the Chopped mango and Coconut Milk to the pan and cook for a further 1 minute.
- Now pour into the oven proof Dish.
- To make the crumble topping mix together the flour, butter, and crostini until consistency resembles bread crumbs.
- Add the crumble topping to the Chicken and place in a preheated oven at 210 until topping turns golden brown.
