Ingredients
For the Chocolate Bread
250g plain flour
2 teaspoons baking powder
125g (4 1/2 oz) unsalted butter, softened
4 ripe bananas
2 eggs, lightly beaten1 teaspoon vanilla extract
250g caster sugar
175g of Hotel Chocolat 70% chocolate drops
Baked Banana ingredients
30g caster sugar
Half a teaspoon of vanilla extractDash of white rum
Method:Marinade
- Combine the baking powder, vanilla extract and sugar together. In a large bowl mix in the butter, (make sure the butter is at room temperature so that it mixes well with the other ingredients).
- Beat in the eggs one at a time. Whisk the ingredients until they have all combined to create a creamy consistency. Add the flour a 1/3 at a time until flour is blended.
- Place the 175g of 70% dark in a heatproof bowl and place over barely simmering water allowing the steam to melt the chocolate. Continually making sure the chocolate is melting not burning.
When the chocolate is melted add to the bread mixture prepared earlier and Whisk until chocolate is completely blended in.
- Now prepare and bake your Banana’s following the instructions below .
- Take you bananas, de-skin, and then slice length ways. Place into a non-stick oven tray and coat with the sugar, vanilla extract and a dash of rum. Place into a preheated oven at 180 degrees or gas mark 5. Keep checking you bananas to make sure they are not burning. After 10 minutes take out of oven and place to the side to allow to cool off.
- Once bananas have cooled down chop roughly and then add to your bread mixture. Make sure the bananas have been mixed in completely before emptying the contents into a deep loaf tin.
- Place in oven for 1 hour checking bread is rising evenly.
- To check the bread is ready insert into the centre of the bread, if the knife returns clean then the bread is ready if not then keep cooking and check again after 5 minutes
- Take out leave to cool for 20 minutes
- Slice to serve
