Method
- In preparation make your chocolate cups
- Bring the cream to the boil with the sugar and coffee powder stirring continuously. Stir in the glucose syrup
- Trickle the chopped couveture into the hot cream, a little at a time, stirring continuously as they melt
- In a separate bowl, whisk the butter until its volume visibly increases
- Make sure that the chocolate mixture is at the same temperature as the butter then gradually stir in the butter
- Continue beating until the mixture binds to form a homogeneous light brown mass
- Spoon the mixture into a piping bag and pipe into chilled chocolate cups
- Chill until ready to serve
