Method
  1. In preparation make your chocolate cups
  1. Bring the cream to the boil with the sugar and coffee powder stirring continuously. Stir in the glucose syrup
  1. Trickle the chopped couveture into the hot cream, a little at a time, stirring continuously as they melt
  1. In a separate bowl, whisk the butter until its volume visibly increases
  1. Make sure that the chocolate mixture is at the same temperature as the butter then gradually stir in the butter
  1. Continue beating until the mixture binds to form a homogeneous light brown mass
  1. Spoon the mixture into a piping bag and pipe into chilled chocolate cups

  2. Chill until ready to serve
