Chocolate Mousse

Serves 6
Ease of preparation: Easy
Preparation time: 15minutes and 2 hours chilling time

Equipment
Heatproof bowl
Whisk
6 small glasses

Ingredients



Method
  1. Place the Hotel Chocolat dark cooking chocolate in a heat proof bowl and place over barely simmering water allowing the steam to melt the chocolate. Continually make sure the chocolate is melting not Burning
  2. Once the chocolate has melted remove it from the heat and stir thoroughly until the mixture is smooth and glossy.
  3. Allow the chocolate to cool slightly before adding the egg yolks. Mix them in together thoroughly.
  4. In a separate bowl whisk the egg whites to the soft peak stage. Whisk in half of the sugar gradually then continue whisking until the egg whites are glossy
  5. Fold the egg whites into the chocolate mixture taking care not to knock the air out of the egg whites
  6. Divide the mousse into glasses and chill for at least 2 hours.
  7. Whisk the whipping cream and whilst whipping the cream add the last of the sugar and also add 2 tsp of vanilla essence
  8. Once the mixture is smooth and thick, add the cream to the top of the chilled mousse
  9. Add decoration as desired
