Ingredients:
For the Cookie Dough:
- 225g Self-Raising Flour
- 225g Margarine
- 100g Caster Sugar
- 3 tbsp Organic Cocoa Powder
- 5 tbsp Milk
- 1 tsp Vanilla Essence
For the Decoration:
Method:
- Pre-heat the oven to 190ºC/375ºF/Gas Mark 5. Grease two baking trays.
- Sift flour, sugar and cocoa powder in a bowl and rub in the margarine.
- Add the milk and vanilla essence, mix well. Bring together with your hands and knead lightly on a floured surface.
- Roll out to 0.5cm (1/4 inch) thick. Use a Christmas tree shaped biscuit cutter to cut 24 biscuits. Dip the cookie cutter into flour in between cutting each biscuit to prevent the dough from sticking.
- Place onto trays and refrigerate for 15 minutes. Bake for 15 minutes, or until firm to touch, and leave to stand for 5 minutes. Transfer to a wire rack to cool completely.
- Melt milk chocolate and spread over the flat side of each biscuit. Press 1 paddle pop stick onto half of the biscuits and sandwich together with remaining biscuits. Refrigerate until firm.
- Once the chocolate has set, melt the white chocolate and place into a piping bag. Snip off the bottom. Pipe a zigzag pattern over the trees and decorate. Allow to set. Store in an airtight container.
