Ingredients:

For the Cookie Dough:

  • 225g Self-Raising Flour
  • 225g Margarine
  • 100g Caster Sugar
  • 3 tbsp Organic Cocoa Powder
  • 5 tbsp Milk
  • 1 tsp Vanilla Essence
For the Decoration:

Method:

  1. Pre-heat the oven to 190ºC/375ºF/Gas Mark 5. Grease two baking trays.

  2. Sift flour, sugar and cocoa powder in a bowl and rub in the margarine.

  3. Add the milk and vanilla essence, mix well. Bring together with your hands and knead lightly on a floured surface.

  4. Roll out to 0.5cm (1/4 inch) thick. Use a Christmas tree shaped biscuit cutter to cut 24 biscuits. Dip the cookie cutter into flour in between cutting each biscuit to prevent the dough from sticking.

  5. Place onto trays and refrigerate for 15 minutes. Bake for 15 minutes, or until firm to touch, and leave to stand for 5 minutes. Transfer to a wire rack to cool completely.

  6. Melt milk chocolate and spread over the flat side of each biscuit. Press 1 paddle pop stick onto half of the biscuits and sandwich together with remaining biscuits. Refrigerate until firm.

  7. Once the chocolate has set, melt the white chocolate and place into a piping bag. Snip off the bottom. Pipe a zigzag pattern over the trees and decorate. Allow to set. Store in an airtight container.
