Ingredients
300g Plain flour
1tbsp baking soda
1tbsp Salt
1tsp Ground Cinnamon
115g unsalted butter
115g smooth peanut Butter
175g Light brown sugar
80g Granulated Sugar
2 Large Eggs
200g Hotel Chocolat Milk Chocolate for Cooking
90g roasted salted peanuts coarsely chopped
2 tsp of Vanilla Extract
Method
Whisk together flour, baking soda, salt, and cinnamon. Set aside.
Beat butter and peanut butter using an electric mixer on medium speed. Mix about 2 minutes, or until combined. Add sugars and mix another 2 minutes. Add eggs and mix. Gradually add flour mixture, mixing just until combined. Fold in chocolate chips, peanuts, and vanilla. Refrigerate dough about 15 minutes or until slightly firm.
Preheat oven to 350°.
Roll dough using a rolling pin until dough is half an inch thick and use a 10cm cutter to cut out the cookies 2-3 inches apart on lined baking sheets. Bake 15 minutes or until golden. Cool on wire racks.
