Ingredients
- 2 tbsp of Hotel Chocolat Pure Cocoa Bean Shavings
- 1kg boneless leg of pork, skin removed, rolled and tied
- 2 tbsp of soft honey
- 1 tbsp of tomato puree
- 1 clove of garlic crushed
- Salt and pepper for seasoning
Method:
- Mix together the chocolate, honey, tomato puree, crushed garlic and grated ginger, as this creates the marinade for the pork.
- Create a large incision into the pork of about 3 inches and stuff the pork with the marinade and then rub the rest of the marinade all around the pork.
- Wrap the pork in cling film to allow the marinade to soak into the pork.
- Leave to marinade in the fridge for 24 hours
- Take pork out of the fridge an hour before cooking to allow the pork to rise to room temperature
- Preheat oven to 180/ gas mark 4
- Roast in oven for 1 and a half to 2 hours, until golden brown and crisp
- Check pork every 25mins and re-baste when desired to stop the pork becoming dry
- At the end of the cooking time, pierce the thickest part of the meat with a skewer, if the juices come out clear, remove from the oven, cover in aluminium foil and rest in a warm place for 10 minutes.
- Carve and serve.
- Season as Preferred
