Roast pork thigh with a Spicy Chocolate Sauce

Ingredients

  • 2 tbsp of Hotel Chocolat Pure Cocoa Bean Shavings

  • 1kg boneless leg of pork, skin removed, rolled and tied

  • 2 tbsp of soft honey

  • 1 tbsp of tomato puree

  • 1 clove of garlic crushed
  • 2 tsp grated ginger
  • Salt and pepper for seasoning

Method:
  1. Mix together the chocolate, honey, tomato puree, crushed garlic and grated ginger, as this creates the marinade for the pork.
  2. Create a large incision into the pork of about 3 inches and stuff the pork with the marinade and then rub the rest of the marinade all around the pork.
  3. Wrap the pork in cling film to allow the marinade to soak into the pork.
  4. Leave to marinade in the fridge for 24 hours
  5. Take pork out of the fridge an hour before cooking to allow the pork to rise to room temperature
  6. Preheat oven to 180/ gas mark 4
  7. Roast in oven for 1 and a half to 2 hours, until golden brown and crisp
  8. Check pork every 25mins and re-baste when desired to stop the pork becoming dry
  9. At the end of the cooking time, pierce the thickest part of the meat with a skewer, if the juices come out clear, remove from the oven, cover in aluminium foil and rest in a warm place for 10 minutes.
  10. Carve and serve.
  11. Season as Preferred

Serving suggestion, serve with crunchy carrots and roast potatoes
