Venison Rump Steak in a Rich Chocolaty Red wine sauce

Cooking time: 20 minutes

Ingredients

  • 2 Venison rump steaks

  • 35g Butter

  • 2 Cloves of Garlic

  • 240ml Red wine

  • 1 1/2 level tbs of Cocoa Bean Shavings
  • Salt and Pepper for seasoning

Method:
  1. Pan fry a seasoned Venison rump steak on both sides in 20g butter and garlic (keep the venison rare). Set aside to rest.
  2. Then de-glaze the pan with red wine (quite a bit) burn off the alcohol and let reduce a bit.
  3. Stir in a touch 15g butter and add the cocoa bean shavings.
  4. Stir and pour over Venison.
  5. Serve

Serve with woodland mushrooms lightly fried in garlic and butter, braised red cabbage and fruits of the forest.
