Rocky Road Brownies

Inspired by Chocolate Obsession

Ingredients
  • 160g Macho Liquid Chocolat™

  • 140g Unsalted butter

  • 100g Plain Flour

  • 3 Large eggs, at room temperature

  • 1tsp Vanilla extract

  • 280g Granulated sugar

  • 40g Walnuts roughly chopped

  • 40g Hazelnuts roughly chopped

  • 6 Marshmallows roughly chopped

  • A splash of flavourless vegetable oil

Method
  1. Preheat the oven to 160 C/325F/Gas Mark 3. While you’re waiting, line the bottom of a 20cm square tin with greaseproof paper, rubbing the sides and the greaseproof paper with a little vegetable oil.

  2. Mix 85g of Macho Liquid Chocolat™ and all of the butter in a heatproof bowl. Heat the bowl gently over a pan of boiling water (bain-marie), stirring occasionally until the butter and chocolate have completely melted and blended together into a smooth mixture. Remove from heat and set aside.

  3. Sift the flour into a bowl.

  4. In a separate bowl, hand whisk the egg and vanilla extract until well blended. Then whisk in the sugar.

  5. Now whisk the egg mix into the Liquid Chocolat™ mixture, add the flour and the remaining 75g of Macho Liquid Chocolat™ and mix well until the sides of the bowl are clear of any flour and it’s a smooth batter. Next add the roughly chopped nuts and stir them in well.

  6. Pour into the prepared tin, spreading evenly over the tin. Gently push the marshmallow pieces halfway into the surface of the mixture.

  7. Bake on the middle shelf of the oven for about 45 minutes, until marshmallows are browned and when a skewer is inserted into the centre of the brownie in comes out with some batter clinging to it.

  8. Allow to cool for a few minutes, then remove from baking tin and cut into squares.

  9. Sit back, close you eyes and enjoy them while still warm – with a crisp outside and a lusciously soft, chocolaty inside.


  10. And for full-on, chocolate bliss, serve with a cup of Liquid Chocolat™!
