Ingredients Strawberries and Syrup
- 500g fresh Strawberries
- 250ml Water
- 250g Sugar
- 1 tablespoon Cocoa Nib Balsamic Vinegar
- 1 clove
- 1 Cinnamon Stick
- 1 vanilla pod
- ½ peel from a Lemon
Chocolate Gelee- 200g Whipping cream
- 25g Sugar
- 1 gelatine sheet
- 35g 72% Purist dark chocolate
Method- Make your syrup the day before by adding the sugar , water, clove, vanilla, cinnamon, and the lemon zest to a sauce pan and bringing to the boil and then add the cocoa nib balsamic vinegar.
- Add the strawberries and bring to the boil again.
- Turn off the heat and leave the strawberries in the syrup to cool down overnight to allow the flavour to infuse.
- Warm the cream in a pan. Do not allow to boil.
- Use a gelatine sheet, which you need to soak first in cold water for a few minutes. When it becomes soft remove the excess water and place into the warm cream, so that it melts.
- Add the chocolate and mix until smooth and then let rest to thicken, add to a glass, decorating how you would like.
- Add the strawberries and the fill with the syrup.
- Decorate and serve immediately.
